My mother doesn't even know what this stuff is. I found out about it recently when I found a book at a used bookstore that discussed Chinese regional cooking. All of a sudden, I was on a mission to find this stuff. 99 Ranch in Seattle did not carry it. I went to Vancouver, BC and could not find it either!!! Everyone I described it to thought I was talking about nanru (red fermented beancurd). Then, I discovered a Taiwanese-owned mom-and-pop grocery in Chinatown and she had it there, along with other hard-to-find things like osmanthus sugar and mushroom powder, not to mention red wine lees flavored crackers. I considered making it too from recipes from the net. However, since I found some, I won't be making any red wine lees myself.&lt;/p&gt;&lt;p&gt;And then, as if it's coming into fashion, in this month's Saveur Magazine (April 2010) they feature an article about Taiwanese cooking and they have a recipe using hong zao (aka red wine lees/sediment AKA anka sauce).&lt;/p&gt;&lt;p&gt;So, now I have 2 recipes: one from my book (hong zao chicken) and one from the article (hong zao sour fried pork cutlets). To each his own . . .. I remember watching a Fear Factor where contestants were forced to eat a preserved duck egg and some of them were crying . ..  So hilarious!!!
